The textured proteins from the pea and field bean have a unique structure and water binding capacity and are available in the sizes "Chunks" and "Minced". The textured pea protein is available with a protein content of 55% and 65%, and the textured Fabaprotein has a 65% protein content. Due to its extraordinary structure the products is used mainly as vegan meat substitute in minced meat products, boiled sausage alternatives and vegan nuggets, but also in dishes such as lasagne, bolognese, tacos and chilli sin carne.

The textured proteins must first be rehydrated before processing. For this purpose, the "Minced" products require three times and "chunks" four to five times the amount of water. The "Minced" products must swell for three minutes, the "Chunks" for five minutes. Afterwards the textured proteins can be processed in a similar way than meat.
