Tapioca is won from the storage roots of the Manihot esculenta plant, commonly known as 'cassava' or 'manioc'. This brown-skinned root is native to various regions of Asia, Africa, and South America. For the production of tapioca syrup, the cassava is harvested and ground into starch. The starch is then broken down into a syrup using GMO-free enzymes. Tapioca syrup serves as an alternative ingredient to conventional table sugar, honey, molasses, and maple syrup.
